I usually do a dry spice rub that I mix up called Sticky Chicken. You let it marinate overnight, then bake it on 250 for 5-6 hours uncovered. It’s always perfect.

I usually roast 3-4 at a time. We eat one, then I take the meat off of the bones of the other 3 and put the meat from each into a freezer bag along with the pan juices.

Because the dry rub is spicy it always makes a great base for mexican, or just chicken over rice with the pan juices.

We have a large family, so there are never any leftovers, but I do use the carcass to make stock, so we do get “free” chicken stock for soup the next day.

I’ll probably lose some weight but not really because of the diet (french fries are generally OK, for example). I started up at Crossfit yesterday, so that’s where the weight loss will probably come from.

I’ve been wondering why olive oil, too, but haven’t figured it out yet. (It’s my first year doing it… I guess I have a few extra sins to cleanse this year…haha). Once I figure it out I’ll let you know though.
